Favorite Flavors

Wasabi and Horseradish

I like things hot and wasabi and horseradish are some of my favorite ingredients to reach for when I want to add both heat and flavor to a dish. Although wasabi is sometimes called Japanese Horseradish (and horseradish colored with green food coloring is frequently substituted for it), it is a completely different rhizome with a very different flavor profile. Fresh wasabi (pictured here) is now being grown in the US so I hope it will soon be easier to find in the market. See Kitchen Shrink to learn more about the real thing.
